1️⃣ Caramelize the onions

  • Heat olive oil + butter in skillet over medium heat.

  • Add sliced onions, garlic powder, and smoked paprika.

  • Cook 5–6 minutes until soft and lightly golden.

2️⃣ Mix the filling

  • In a bowl, combine:
    ✔ shredded chicken
    ✔ chopped bacon
    ✔ BBQ sauce
    ✔ caramelized onions
    ✔ cheddar + mozzarella

  • Stir until fully coated and cheesy.

3️⃣ Toast the bread

  • Wipe skillet clean.

  • Add a little butter and toast buns/Texas toast until golden.

4️⃣ Build the melts

  • Add a thick layer of chicken-bacon-BBQ mixture to each bottom bun.

  • Add extra cheese on top.

  • Close sandwich.

5️⃣ Melt it together

  • Return sandwiches to skillet on low heat.

  • Cover with a lid to melt cheese (2–3 minutes).

  • Flip gently and crisp the other side.
