1 lb breakfast sausage

3 tbsp butter
3 tbsp flour
2 cups whole milk
½ lb cooked breakfast sausage (reserve from earlier)
½ tsp black pepper
½ tsp salt
Pinch of cayenne (optional)

1. Cook the Sausage & Bacon
In a skillet, cook breakfast sausage until browned.
Remove half of the sausage and set aside for the gravy.
Cook bacon until crisp; drain and chop.
2. Scramble the Eggs
In a bowl, whisk eggs with salt and pepper.
Pour into a buttered skillet.
Cook on low heat, stirring gently until soft and fluffy.
Remove from heat — don’t overcook.
3. Build the Filling
In a bowl combine:
Scrambled eggs
Sausage
Bacon
Cheese
Green onions
Mix gently.
4. Roll the Enchiladas
Lay out flour tortillas.
Spoon egg mixture down the center of each.
Roll tightly and place seam-side down into a greased baking dish.
5. Make the Sausage Gravy
Melt butter in a saucepan over medium heat.
Whisk in flour to form a paste; cook 1 minute.
Slowly pour in the milk while whisking constantly.
Add the reserved cooked sausage, salt, pepper, and cayenne.
Simmer 3–5 minutes until thick and creamy.
6. Bake
Pour sausage gravy over the enchiladas.
Bake at 350°F for 20–25 minutes.
Top should look bubbly and slightly golden.
7. Serve
Serve warm with extra green onions or cheese on top.
