2 lbs baby potatoes (halved)
2 lbs boneless skinless chicken breasts (cubed)
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp Italian seasoning
Instructions
Preheat oven to 400°F (200°C).
Add potatoes to a large baking dish. Drizzle with olive oil and season with salt, pepper, paprika, and Italian seasoning. Toss well.
Nestle chicken pieces evenly among the potatoes.
In a saucepan over medium heat, melt butter. Add garlic and cook for 30 seconds until fragrant.
Stir in heavy cream and chicken broth. Simmer for 2–3 minutes.
Remove from heat and stir in parmesan cheese until smooth.
Pour sauce evenly over chicken and potatoes.
Cover loosely with foil and bake for 25 minutes.
Remove foil and bake another 15 minutes until golden and bubbly.
Garnish with parsley and extra parmesan before serving.
