Farmhouse Skillet Garlic Butter Cornbread

Tools Needed
Ingredients
Dry Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
Wet Ingredients
2 large eggs
1 cup buttermilk (or milk + 1 tablespoon vinegar)
⅓ cup melted butter
¼ cup honey or sugar (optional – for sweet cornbread)
Garlic Butter Topping
3 tablespoons butter
1 teaspoon garlic powder (or 1 clove fresh garlic, minced)
Instructions
Preheat oven to 400°F.
Place the cast iron skillet in the oven with 1 tablespoon butter to heat while you prepare the batter.
In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
In a separate bowl, whisk eggs, buttermilk, melted butter, and honey (if using).
Pour wet ingredients into dry ingredients and stir just until combined. Do not overmix.
Carefully remove the hot skillet from the oven and swirl melted butter to coat the bottom and sides.
Pour batter into the hot skillet.
Bake for 20–25 minutes, until golden brown and a toothpick inserted in the center comes out clean.
While cornbread bakes, melt remaining butter and stir in garlic.
Brush garlic butter over the hot cornbread immediately after baking.
