Hearty Homestead Breakfast Burritos

  • 1 lb breakfast sausage

  • 6 slices bacon, cooked & chopped

Instructions

1. Cook the Sausage

  • Heat a skillet over medium-high.

  • Add sausage and cook until browned, breaking it apart as it cooks.

  • Remove and set aside.

2. Cook the Bacon

  • Cook bacon in the same skillet until crispy.

  • Remove, drain, and chop into pieces.

  • Leave 1 tbsp bacon grease in the skillet.

3. Cook the Potatoes

  • Add olive oil to the skillet with the bacon grease.

  • Add potatoes (or hash browns) in a single layer.

  • Season with garlic powder, paprika, and salt.

  • Cook 8–10 minutes until crispy and golden.

  • Add diced onion and peppers; cook 3–4 minutes more.

4. Scramble the Eggs

  • Whisk eggs, milk, salt, and pepper.

  • Melt butter in a small skillet.

  • Add eggs and cook low & slow, stirring gently.

  • Remove while still soft — they finish cooking in the burrito.

Tips
  • Add a spoon of cream cheese to the eggs for extra creaminess.

  • Make 12 smaller burritos using medium tortillas.

  • Freeze individually in foil for easy heat-and-eat breakfasts.

5. Assemble the Burritos

  • Warm tortillas in a dry skillet or microwave for 10 seconds.

  • On each tortilla add:

    • Scoop of potatoes

    • Sausage

    • Bacon

    • Scrambled eggs

    • Cheese

  • Fold sides inward and roll tightly from the bottom up.

6. Toast the Burritos

(Optional but makes a BIG difference)

  • Place burritos seam-side down in a skillet.

  • Toast 1–2 minutes per side until golden and sealed.

7. Serve

Slice in half and serve with:

  • Salsa

  • Sour cream

  • Hot sauce

  • Fresh fruit
