Hearty Homestead Breakfast Burritos
Ingredients
Protein
1 lb breakfast sausage
6 slices bacon, cooked & chopped
Eggs
8 eggs
¼ cup milk
Potatoes
2 cups diced potatoes OR frozen hash browns
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
½ tsp salt
Veggies
½ onion, diced
½ bell pepper, diced
Other
1–2 cups shredded cheddar or Mexican-blend cheese
6 large flour tortillas

Instructions
1. Cook the Sausage
Heat a skillet over medium-high.
Add sausage and cook until browned, breaking it apart as it cooks.
Remove and set aside.
2. Cook the Bacon
Cook bacon in the same skillet until crispy.
Remove, drain, and chop into pieces.
Leave 1 tbsp bacon grease in the skillet.
3. Cook the Potatoes
Add olive oil to the skillet with the bacon grease.
Add potatoes (or hash browns) in a single layer.
Season with garlic powder, paprika, and salt.
Cook 8–10 minutes until crispy and golden.
Add diced onion and peppers; cook 3–4 minutes more.
4. Scramble the Eggs
Whisk eggs, milk, salt, and pepper.
Melt butter in a small skillet.
Add eggs and cook low & slow, stirring gently.
Remove while still soft — they finish cooking in the burrito.
5. Assemble the Burritos
Warm tortillas in a dry skillet or microwave for 10 seconds.
On each tortilla add:
Scoop of potatoes
Sausage
Bacon
Scrambled eggs
Cheese
Fold sides inward and roll tightly from the bottom up.
6. Toast the Burritos
(Optional but makes a BIG difference)
Place burritos seam-side down in a skillet.
Toast 1–2 minutes per side until golden and sealed.
7. Serve
Slice in half and serve with:
Sour cream
Hot sauce
Fresh fruit
Tips
Add a spoon of cream cheese to the eggs for extra creaminess.
Make 12 smaller burritos using medium tortillas.
Freeze individually in foil for easy heat-and-eat breakfasts.
