2. Cook the Bacon

  1. Cook bacon in the same skillet until crispy.

  2. Remove, drain, and chop into pieces.

  3. Leave 1 tbsp bacon grease in the skillet.

3. Cook the Potatoes

  1. Add olive oil to the skillet with the bacon grease.

  2. Add potatoes (or hash browns) in a single layer.

  3. Season with garlic powder, paprika, and salt.

  4. Cook 8–10 minutes until crispy and golden.

  5. Add diced onion and peppers; cook 3–4 minutes more.

4. Scramble the Eggs

  1. Whisk eggs, milk, salt, and pepper.

  2. Melt butter in a small skillet.

  3. Add eggs and cook low & slow, stirring gently.

  4. Remove while still soft — they finish cooking in the burrito.

5. Assemble the Burritos

  1. Warm tortillas in a dry skillet or microwave for 10 seconds.

  2. On each tortilla add:

    • Scoop of potatoes

    • Sausage

  3. Fold sides inward and roll tightly from the bottom up.

6. Toast the Burritos

(Optional but makes a BIG difference)

  1. Place burritos seam-side down in a skillet.

  2. Toast 1–2 minutes per side until golden and sealed.

7. Serve

Slice in half and serve with:

  • Salsa

  • Sour cream

  • Hot sauce

  • Fresh fruit
