Ingredients

For the Crust

  • 1 can jumbo flaky biscuits OR 1 store-bought pizza dough

  • 1 tbsp melted butter

For the Toppings

  • 6 slices bacon, cooked & chopped

  • ½ lb breakfast sausage, cooked & crumbled

  • 1 cup shredded cheddar cheese

  • 1 cup mozzarella cheese

  • ½ cup bell peppers, diced

  • ½ cup onions, diced

  • 4 large eggs

  • Salt & pepper to taste

  • Optional: chives or green onions for topping

Tools Needed

Instructions

1. Prepare the Crust

  1. Preheat oven to 375°F.

  2. Grease a baking sheet or pizza pan.

  3. If using biscuits:

    • Separate biscuits and press them together to form a single sheet of dough.

    • Pinch seams so they stay sealed.

  4. If using pizza dough, roll into about a 12-inch circle.

  5. Brush the dough lightly with melted butter.

  6. Bake 8 minutes to partially cook the crust.

2. Cook the Toppings

  1. In a skillet, cook bacon until crispy. Remove and chop.

  2. In the same skillet, cook breakfast sausage, breaking it apart.

  3. Dice peppers and onions.

  4. Mix sausage, bacon, peppers, and onions together in a bowl.

3. Assemble the Pizza

  1. Remove the crust from the oven after the initial 8 minutes.

  2. Sprinkle half the cheese across the crust.

  3. Spread cooked sausage/bacon/veggies evenly across the top.

  4. Make 4 small wells in the topping mixture.

  5. Crack one egg into each well.

  6. Season eggs lightly with salt & pepper.

  7. Top with remaining cheese.

4. Bake

  1. Return pizza to oven.

  2. Bake 12–15 minutes, or until:

    • Eggs are set but still soft

    • Cheese is melted

    • Crust is golden brown

5. Serve

  • Slice into 6 pieces.

  • Top with green onions if desired.

  • Serve immediately while hot.

Tips for Best Results

  • If you prefer fully cooked eggs:
Scramble eggs lightly and pour over toppings before cheese.

  • Add jalapeños for a spicy version.

  • Using biscuit dough makes the pizza thicker and fluffier.

  • Pizza dough gives a thinner, crisper style.
